A simple, quick test for hygiene control of work surfaces. Application fields: Food industry, catering, dairy industry, health authorities and HACCP consultants. A colorimetric scale to interpret the results is printed on each tube. The comparison between the solution colour and the colorimetric scale confirms if the surface is clean or dirty. It’s enough to streak the wet swab on a surface, and to insert it into the tube. Break the glass vial contained in the tube by using the clamp. At the end of the test the tube can be disposed of as normal waste. Room temperature storage.

The test highlights the presence of proteinic residues and of other reducing substances on the analysed surface. The method, based on the reaction of bicinchoninic acid (reagent A) with cupric sulfate (reagent B) in alkaline conditions, produces the complexation of Cu²⁺ ions with the peptidic bonds of proteins. Such complex takes on a purple colouring directly proportional to the concentration of proteins, fats and sugars which are present on the checked surface.
